How to brew Phoenix oolong
Phoenix oolong rewards a slightly hotter brew than lighter oolongs:
- Water temperature: 95°C
- Leaf: about 3 g per 200 ml (a little more for a fuller cup)
- First infusion: 30–45 seconds
- Re-steeps: 4–6 more times, adding 10–15 seconds each time — the aroma opens up beautifully across infusions
A short first rinse (5–10 seconds, poured off) wakes the leaf and softens the first proper infusion. Phoenix oolong is well suited to gongfu-style brewing in a gaiwan, but works just as well in a simple teapot.

How to brew
Phoenix oolong rewards gongfu brewing. Use about 5 g in a small pot with water at 95°C. Rinse for 5–10 seconds and discard, then steep 15–20 seconds for the first drink, adding 5–10 seconds each round — it will give you 7–10 steeps, and the honey-orchid aroma shifts noticeably across them. For a mug, use a heaped teaspoon and steep 2–3 minutes.
