White Tea

White tea is the least-processed of the true teas — young buds and leaves from Camellia sinensis that are simply withered and dried, with no rolling or oxidation. That minimal handling is what gives white tea its pale colour, naturally sweet, delicate flavour, and the lowest caffeine of any true tea (around 10–20 mg per cup). It also keeps the leaf's antioxidants and L-theanine largely intact, which is why white tea is a favourite for a calm, gentle cup.

How to brew white tea

White tea is forgiving but tastes best brewed gently: 80–85°C, about 3 g per 200 ml, steeped 2–3 minutes for the first infusion. It re-steeps well — give it two or three more infusions, adding time each round. Because it's so low in caffeine, white tea is one of the safest true teas to drink later in the day.
