Why weight and time matter
Most bad tea at home is a measurement problem, not a leaf problem. A heaped "teaspoon" of a fluffy white tea and of a dense rolled oolong can differ by several grams, which changes the strength of the cup entirely. Weighing removes that variable: 2–3 g per cup for most teas, 5 g for a small gongfu pot. At 0.1 g precision you can hit those numbers exactly. Timing removes the other variable — 30 seconds too long is what turns a green tea bitter.
